Thirty-six hours, four ingredients

The sourdough starts on Monday afternoon for Wednesday morning. Long ferment is why it keeps a week without anything added, and why we cannot simply bake more when it sells out.

The flour comes from one mill forty kilometres away, stone-milled and delivered weekly. When their wheat changes with the season, our loaf changes with it.

Before you visit

Why do you sell out so early?

Because a 36-hour ferment means Wednesday bread was started on Monday. We cannot bake more on the day, so we bake what we can sell fresh.

Can I pre-order?

Until 20:00 the night before, collected from 07:00. It is the only way to be certain of a loaf on a Saturday.

Do you do celebration cakes?

Yes, with a week of notice and a conversation about what the person actually likes rather than a catalogue.

Is anything gluten free?

No, honestly. We use one small room and shared flour in the air, so we cannot promise a safe product and will not pretend otherwise.
