House rye, oleo saccharum from yesterday's citrus, aquafaba. The one we are known for.
Mezcal, burnt honey, lime. Smoky enough to divide a table, which is the intention.
Gin washed with dill and cucumber, stirred forty turns, served brutally cold.

Twelve drinks are printed and the bartenders will cheerfully ignore all of them. Tell them a spirit and a mood and you will get something that exists nowhere else.
Four zero-proof drinks are built with the same labour as the rest and priced like we mean it. Nobody at the table should be handed a sugary consolation.

Walk-ins until 21:00, bookings after. Friday and Saturday go about ten days ahead.
Small things only: olives, almonds, a very good toastie after 22:00. We are a bar and we would rather be a good one.
That is the preferred way to order. Name a spirit and a mood and let the bartender do the rest.
It seats fourteen and is bookable most nights except Saturday. There is no hire fee, just a minimum spend.
After that we take bookings only. The back room seats fourteen for private hire.
