From the kitchen
The kitchen has one induction ring and a six-metre hearth. Almost everything that reaches the pass has been near fire, which is a constraint we chose and now design the menu around.
We buy whole animals and whole boxes, so a course changes the week the grower changes. If you booked eight weeks ago, expect a different menu from the one you read then.
